These FSIS Food Defense Guidelines for Slaughter and Processing Establishments are designed to assist Federal- and State-inspected facilities in developing preventive food defense measures. Operators are encouraged to review their current procedures and controls to address the potential for intentional and unintentional, contamination and make appropriate improvements.
